Here are two versions of delicious oven baked eggs, perfect for a Sunday breakfast! The ingredients are dosed for 1 ramekin and we usually serve 2 per person. Multiply this recipe to suit your needs!
1 spoon of liquid cream
20gr chorizo or 1 slice Serrano jam
20gr goat cheese
1 knob of butter
a bit of chopped chives to garnish
Preheat your oven to 200°C and butter your ramekins. The ingredients listed above are for one single ramequin.
For the chorizo version, take the skin off and cut the sausage into small 5mm dices. Chop the cheese as well. Mix the sausage, cheese and cream together and them place them on the bottom of the ramekin. Make a little hole in the center and add an egg.
For the Serrano version, wrap the slice of ham around the ramekin, then add the cream and chopped cheese mixture. Add the egg on top.
Pop the ramekins in the oven for 10 minutes, or until the egg-white colours up. Garnish with chives and serve immediately.
